Cranberry Pear Walnut Cake

One of my favorite types of berries to bake with is cranberries and one of my favorite fruits is a pear. This is why when I discovered this recipe or cranberry-pear-walnut cake, I was pretty excited. Turns out, this was a good discovery because it was delicious. Here’s he recipe:

•2 1/2 cup flour
•2 tsp baking powder
•1/2 tsp cinnamon
•1/2 tsp allspice
•3 tbsp butter
•3/4 cup sugar
•1/4 cup brown sugar
•2 eggs
•1 cup milk
•2 cups cranberries
•1 pear, peeled, cores and chopped
•3/4 cup chopped walnuts

-Combine 2 cups flour, baking powder, cinnamon as allspice, set aside
-Beat butter for 30 seconds. Beat in sugars and eggs, one at a time. Add flour mixture alternately with the milk. Beat on low speed
-In a separate bowl, toss cranberries, pear and walnuts with the remaining 1/2 cup flour; gently stir into the batter
-Spoon into greased pan and bake for 45-50 minutes at 350°

This cake is light and delicious and fruity. It’s perfect for the fall season. You could also use oranges or green apples instead of the pear to change up the flavor profile.
